Peruvian Ceviche

This a basic recipe that I use when I make a ceviche
Ingredients
- yellow onions
- large heirloom tomato
- jalapeno
- limes
- cucumbers
- cilantro
- mango (optional)
- your preferred choice of protein (fish, seafood, tofu, etc)
Instructions
- Mince the veggies and add them together in a separate bowl.
- Mix in a cup lime juice with the shrimp in the bowl and let it sit for 30 minutes to cook.
- After the 30 mins strain the shrimp and mix in the veggies.
