Bolani is a delicious Afghan stuffed flatbread, pan-fried until golden and crispy. This recipe uses fresh flour tortillas for convenience, filled with a spiced potato mixture, then fried and served with chutney.
Ingredients
- 4 large fresh flour tortillas
- 2 medium potatoes, boiled and mashed
- 2 tbsp green onions, finely chopped
- 2 tbsp cilantro, chopped
- 1 small green chili, finely minced (optional)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 2 tbsp oil, for frying
Instructions
- Prepare the Filling
- In a bowl, mix the mashed potatoes, green onions, cilantro, chili (if using), cumin, coriander, salt, and black pepper until well combined.
- Assemble the Bolani
- Take a flour tortilla and spread a thin layer of the potato filling over one half.
- Fold the tortilla in half, pressing gently to seal.
- Pan-Fry the Bolani
- Heat 1 tbsp oil in a skillet over medium heat.
- Place the folded tortilla in the pan and cook for 2-3 minutes per side, until golden brown and crispy.
- Repeat with remaining tortillas, adding more oil as needed.
- Serve
- Cut each bolani in half and serve warm with chutney or yogurt.
Serving Suggestions
- Green Chutney: Blend cilantro, mint, garlic, lemon juice, salt, and a little water.
- Garlic Yogurt: Mix plain yogurt with minced garlic, salt, and a squeeze of lemon.
