Bolani is a delicious Afghan stuffed flatbread, pan-fried until golden and crispy. This recipe uses fresh flour tortillas for convenience, filled with a spiced potato mixture, then fried and served with chutney.

Afghan Bolani (Pan-Fried Stuffed Flatbread)

Ingredients

  • 4 large fresh flour tortillas
  • 2 medium potatoes, boiled and mashed
  • 2 tbsp green onions, finely chopped
  • 2 tbsp cilantro, chopped
  • 1 small green chili, finely minced (optional)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 tbsp oil, for frying

Instructions

  1. Prepare the Filling
    • In a bowl, mix the mashed potatoes, green onions, cilantro, chili (if using), cumin, coriander, salt, and black pepper until well combined.
  2. Assemble the Bolani
    • Take a flour tortilla and spread a thin layer of the potato filling over one half.
    • Fold the tortilla in half, pressing gently to seal.
  3. Pan-Fry the Bolani
    • Heat 1 tbsp oil in a skillet over medium heat.
    • Place the folded tortilla in the pan and cook for 2-3 minutes per side, until golden brown and crispy.
    • Repeat with remaining tortillas, adding more oil as needed.
  4. Serve
    • Cut each bolani in half and serve warm with chutney or yogurt.

Serving Suggestions

  • Green Chutney: Blend cilantro, mint, garlic, lemon juice, salt, and a little water.
  • Garlic Yogurt: Mix plain yogurt with minced garlic, salt, and a squeeze of lemon.
